The carjcante grape (the j is pronounced like an i in old Sicilian dialect) is a surprisingly acid grape with multiple layers of tension. Its proximity to the sea and the the volcanic soil of Mount Etna gives it a rare complexity. In the mouth, its almost more Northern in style, with a touch of something resembling chenin blanc.
