I think it is important to have a mixture of wine that can bring several states of mind. I see everything as a progression: going from a wine focused on tensions to a more textured wine (Molina del Ciego in Etza). There are two maceration wines to compare (Aligoté and Migiu) which cannot be more different from each other. For the reds, we start with subtlety and elegance. Karamazin (synonymous with blaufrakish in the Czech Republic) is a solera style wine, set the table for the most powerful Spanish wine from Dominio de Urogallo, which is a blend of unknown grape varieties including verdejo tinto, mencia, albarin tinto and the carrasquin.
